As the Byron Bay hinterland settles into winter, Thursdays at Gaia offers a rare opportunity to experience our award-winning cuisine after dark. Typically reserved exclusively for retreat guests, these special evenings invite our local community to enjoy a seasonal dining experience in the warmth and tranquillity of Gaia.

Led by our culinary team, the three-course set menu celebrates the very best produce of the season. Guided entirely by what is growing, harvested and sourced each week, every menu is thoughtfully crafted around fresh, local ingredients, allowing the flavours of winter to take centre stage.

As daylight fades, settle into the cosy atmosphere of Gaia and enjoy a slower evening of nourishing cuisine, meaningful conversation and connection. Whether shared with friends, family or someone special, Thursdays at Gaia offers a dining experience unlike any other in the region.

With only a limited number of seats available each week, bookings are essential.

At Gaia, our menus are shaped by the rhythm of the seasons and our paddock-to-plate philosophy. We work closely with local farmers, growers and producers across the Northern Rivers to source the freshest ingredients available each week.

From seasonal produce harvested from nearby market gardens to artisan breads from local bakers, sustainable seafood and ethically farmed meats, every ingredient is chosen with care and respect for the land it comes from.

Rather than choosing from a menu, guests are invited to place their trust in the kitchen and enjoy a thoughtfully curated progression of dishes that celebrates the flavours of the season and the abundance of our region.

By prioritising local sourcing, we reduce food miles, support regional livelihoods and create a dining experience that is deeply connected to place.

  • Cancellations within 24 hours of the reservation are non-refundable and non-transferable.
  • Cancellations made more than 24 hours prior are non-refundable but may be transferred to another dining date within three months, subject to availability.
  • Bookings are essential.
