A Rare Evening of Chef-Led Dining After Dark
Each Thursday evening this February, Gaia opens its doors in a way that rarely happens. Typically reserved for retreat guests only, dining at Gaia is an intimate, deeply considered experience. Thursdays at Gaia is a special invitation for our local community to experience this cuisine after dark, without staying overnight.
Hosted by Head Chef Dan Trewartha, this chef-led, three-course set menu celebrates Australia’s best wellness cuisine and the extraordinary produce of our region. Each Thursday, the menu is guided entirely by the freshest, seasonal produce, harvested and picked each day, allowing guests to place their trust in the kitchen and enjoy a seasonal progression of dishes as they unfold.
To protect the quality of the experience and the atmosphere of the evening, seats are strictly limited, and bookings are essential. Walk-ins cannot be accommodated.
