How have the Gaia grounds evolved over the last 20 years?

As Spring returns to the Byron Bay hinterland, Gaia celebrates 20 years of harmony between people and place. Over two decades, the land has blossomed under gentle stewardship, with each new addition carefully chosen to enrich both nature and the guest experience.

Walking the grounds today, you’ll see how these gifts of the earth weave into daily life at Gaia:

The bees

Our hives play a vital role in pollinating the orchards and gardens. The honey they produce is harvested to create Gaia’s own Forage Honey, available in our on-site boutique and our online shop. Guests can see and hear the bees at work on their morning walks.

Mushroom logs

A shady spot close to Kukura House is home to mushroom logs, producing shiitake and oyster mushrooms. These harvests are used in our kitchen, adding fresh, earthy flavours to seasonal dishes.

The veggie gardens

Our vegetable and herb gardens supply the kitchen daily. Chefs pick fresh produce in the morning, shaping menus that reflect what is in season. This soil-to-plate approach ensures each meal is vibrant and nourishing.

The chickens

Our pasture-raised chickens provide fresh eggs each day. These eggs are collected by hand and used in breakfasts and other meals. Watching them roam under the orchard trees has become a favourite sight for many guests.

The Forage Tour

The Forage Tour allows guests to explore the gardens and grounds with one of our team. It’s an opportunity to learn about edible plants, see how the land is cared for, and experience firsthand how food moves from the garden to the plate.

The aquapond

The aquapond sits at the heart of the property. Water lilies cover the surface, while fish swim gently below, creating a calm and balanced ecosystem. Many guests enjoy pausing here, watching the movement of the fish and the ripples they create across the water.
