What’s in Season Now
Winter in the Byron Bay Hinterland is a time of quiet abundance. The cooler temperatures bring forth rich greens, grounding roots, and fragrant herbs that thrive in this gentle subtropical climate. Depending on the timing of your stay, you might find yourself harvesting:

Private 2-Hour Cooking Class: Step into Gaia’s kitchen for a hands-on session with one of our talented Senior Chefs.
