Smoked Chicken, Pear & Rocket Salad With Pecans & Lemon Aioli

Gaia's refreshing, earthy salad - quick, easy and delicious!

Ingredients: Salad

1 slightly firm yet slightly under ripe pear

1 handful rocket leaves

12 pecan halves

150g smoked chicken (free range preferably)

 

Ingredients: Lemon Aioli Dressing

1/2 lemon

3 d/spns mayonnaise

1/2 clove garlic

 

Method:

1. Using a zester or fine grater, remove the fine outer layer of yellow skin from half a lemon. For ease, do this while the lemon is whole.

2. Cut the lemon in half and squeee the juice of 1 half into a bowl, add mayonnaise, lemon zest and mix until well combined.

3. Halve and de-core the pear, then cut each half lengthways into 6 slices.

4. To serve, mix rocket leaves, pear slices, smoked chicken pieces and pecan halves together in a bowl and drizzle with the lemon aioli.

NOTE: If serving the salad in individual bowls place some rocket in the bowl and arrange the pear, chicken and pecans on top and drizzle the aioli on top.
