That Famous 'Gaia Muffin' Recipe

Anyone who has been to Gaia knows how good the muffins are. Each chef has their own special touch, but we're sharing a basic muffin recipe so you can enjoy them at home.

 

Ingredients
1 cup self raising gluten free flour
1 cup ground almonds (almond meal)

¾ cup rapadura sugar or maple syrup

½ tspn baking powder
½ cup filtered water
½ cup oat or cows milk
Vanilla essence

3 eggs

1 tblspoon butter or coconut oil (optional)
150g blueberries or get creative with other yummy fillings (dates, coconut, raisins, ginger, walnuts, pecans etc)

Method
  
Mix all dry ingredients together
    
Whisk together eggs and all wet ingredients
    
Gently fold wet mixture into dry, just to combine
    
Add blueberries or other fillings
    
Put muffin mixture into greased moulds
    
Bake at 220°C for the first 12minutes
    
Bake at 180° C for 10 minutes or until cooked
