Almond Milk with Saffron & Cardamom
A delicious, stress-relieving warm drink for those cold autumnal nights. Almonds are high in magnesium which helps to rebalance the stress nutrient ratios in our body... and saffron is a natural anti-depressant.
2 pods cardamom
6 strands saffron
1 d/spn honey
2 cups almond milk
1. Bruise the cardamom pods by banging them once in a mortar and pestle or roll over them once with a rolling pin.
2. Place the saffron strands in a cup, pour 50mls of boiling water over them and let stand for 5 mins.
3. Place cardamom pods, saffron water with the strands in it and almond milk in a small pot and heat to first simmer. Remove from the heat, stir in the honey and serve.
